Pesto pita pizza

~To do~

Preheat oven to 425F.  Spread the pita with pesto and top with the chicken, olives, basil, mozzarella, and Parmesan; season with salt and pepper.  Bake on baking sheet or pizza stone for 10-12 minutes, until cheese is melted.

  • 1/2 head cauliflower
  • 1/4 cup mozzarealla
  • 1 egg lightly beaten
  • 1/2 tsp dried oregano
  • 1/4 tsp garlic, minced or pressed
  • 1/2 tsp garlic salt
  • Extra virgin olive oil
  • 1/4 cup pesto
  • 1 sliced tomato
  • 1 Tbsp fresh basil, chopped
  • Salt and Pepper

  • 1/2 whole-wheat pita (cut so the circle is whole)
  • Olive oil
  • 2 Tbsp Alfredo sauce
  • Feta cheese, crumbled to taste
  • 2 Tbsp black or Greek olives, pitted and sliced
  • 1 Tbsp red onion, chopped
  • 1 Tbsp sun dried tomatoes ( the kind packed in oil), drained and chopped
  • 1 Tbsp chopped fresh basil
  • Salt and Pepper

Mama’s Pizza Crust

This simple thin crust is a perfect subtle base for any pizza. ~ Shopping List ~ 1 package yeast 1 cup warm water 1 teaspoon sugar 1 teaspoon salt 2 tablespoons vegetable oil 2.5 cups flour ~ What to do ~ Preheat oven to 425 degrees (F).  Dissolve yeast in water, add sugar, salt and oil.  Add flour.  Allow dough to rest 5 minutes.  Then knead a few minutes and roll into 2 large crust. Add sauce and toppings to taste and bake.
