~Shopping List~

  • 1 tsp butter
  • 1 tsp almond flour
  • 1/4 cup half and half
  • 1/4 garlic clove, minced
  • 1/4 cup mozzarella cheese, shredded
  • 1 egg lightly beaten
  • 1 cup whole-what macaroni noodles, cooked
  • 1 cup fresh spinach, chopped
  • Nonstick cooking spray
  • Salt and pepper

~To do~

Preheat oven to 400F and spray two muffin tins with cooking spray.  In saucepan, melt the butter over medium heat, then add the almond flour, half and half, garlic, egg, and cheese; season with salt and pepper.  Still until melted, then turn off heat and stir in cooked macaroni and spinach.  Pour equal amounts of noodle mixture into two muffin tins, and bake in the middle of oven for 10-15 minutes, or until slightly golden.

NOTE:  Cook extra and freeze them.  When you are ready to eat, cook them for 2 minutes in the microwave.
