~Shopping List~

  • Olive oil
  • 1/2 garlic clove, minced
  • 1/2 tsp ginger, minced
  • 2 Tbsp onion, chopped
  • 1/4 cup broccoli, cut into bite sized pieces
  • 1/4 carrot, sliced into long strands
  • 1 bonnes chicken breast, cut into bite sized pieces
  • Salt and pepper
  • 1/2 cup rice, cooked

~To do~

Put a deep skillet over high heat:  add half the olive oil and swirl it around, then add the garlic and ginger.  Cook for about 20 seconds, then add the onion and cook for 2 minutes more.  Add the broccoli and carrots and cook until crips-soft, about 5 minutes.  Turn the heat down to low and remove the vegetables to a bowl.

Add another drizzle of olive oil to the pan, turn the heat to high, then add the chicken.  Toss and stir the chicken until it has lost its pink color, about 5 minutes.  Add the vegetables back into the chicken, then add the soy sauce, and salt and pepper to taste.  Stir until most of the liquid is absorbed, just a minute or two more.  Serve over cooked rice.

Replace chicken with shrimp or beef.
